Pancake Mix

Another favorite in our house is pancakes, but sometimes I just don’t have a lot of time in the mornings to prepare them.  A simple and quick way to get around this is to have a container of mix ready to go.  That way, I just measure what I need, add the wet ingredients, and voila!  And, way better tasting than the box stuff.  As with the muffins, just throw all the dry ingredients into a gallon size airtight container.

  • 5 1/4 Cup unbleached flour
  • 6 Tbsp. Sugar
  • 6 tsp. Baking Powder
  • 1 1/2 tsp. Baking SODA
  • 3/4 tsp. salt
  • 9 Tbsp. Flax seed meal

To Prepare:

Use 2 cups of your dry mix (don’t forget to shake first!) and add to that 1 1/2 cup sour milk, 1 egg, and 3 Tbsp. oil.

Makes 12 regular size pancakes
