Chinese Broccoli Chicken

  • 1 bunch fresh broccoli
  • 1 lb. lean beef steak, thinly sliced
  • 1/4 c. oil
  • 6 green onions sliced
  • 1/4 c. water
  • 1/4 c. sherry
  • 1 tbs. sugar
  • 1 tsp. fresh grated ginger root
  • Cooked white rice


Heat 2 tablespoons of oil in a wok or skillet. Add beef and cook 5-7 minutes. Remove beef and set aside. Add remaining 2 tablespoons of oil to the skillet. Sauté the broccoli and onions for 5 minutes. In a small bowl, stir together the 1/4 cup water, soy sauce, wine, and cornstarch; add sugar and ginger. Pour mixture over vegetables; add meat and cover the pan. Reduce heat to a simmer; cook until broccoli is tender, about 5 to 10 minutes. Serve over hot rice.
