Hoppin’ John

Hoppin Johnby Sonya Cardiff

  • Fry 1 or 2 slices of bacon (or you can use olive oil)
  • Dice a bell pepper (any color), a medium onion, and 1-2 celery stalks. Saute in the oil/bacon grease until veggies are beginning to brown.
  • Toss in a couple of cloves of minced garlic.
  • 2 cans of black-eyed peas or really any kind of dark bean you like. Pinto, black, kidney. Doesn’t matter.
  • 1 can of chicken or veggie stock.
  • 2 bay leaves.

Let simmer for 20 min, serve over hot rice.
