Corned Beef & Cabbage

  • 2 -to-3 pound well-trimmed, beef corned brisket (ask your butcher if your uncertain)
  • 1 onion, cut into fourths
  • 3 cloves garlic, crushed
  • 1 head cabbage, cut into 6 or 8 wedges

~Place beef in Dutch oven. Add enough cold water just to cover beef. Add onion and garlic.Heat to boiling. Reduce heat to low. Cover and simmer for at least 2 hours.Remove beef to warm platter and keep warm. Skim fat from broth. Add cabbage to broth. Heat to boiling. Reduce heat to low. Simmer uncovered for 15 minutes, or until cabbage is tender. Serve cabbage with beef.
